Gluten free healthy crumpets

Breakfast is my favourite meal of the day, but that’s usually on the weekend when I can spend time creating a masterpiece of a meal. During the week it can be quite boring. Either eggs or avo toast are the usuals for me. So one morning I decided to experiment with the healthy ingredients that I had at home and landed up making these guys.┬áThese healthy crumpets are the perfect way to have a delicious and exciting breakfast without being laden with excessive amounts of carbs or fat (a bonus is that they are gluten free). This recipe makes the perfect breakfast for me when I’m really hungry – I don’t have a particularly big appetite so it will probably be just enough for you.

Here is what is in them

1 ripe banana

1 egg

Coconut flour

Baking powder

How to make them

I didn’t use a specific amount of the flour and baking powder, because you know, YOLO. So just use your judgement when adding those.

  1. Mash the banana
  2. Add the egg and whisk together
  3. Put in a bit of coconut flour and two pinches of baking powder and combine
  4. The batter consistency should resemble that of a normal crumpet mix (it will be quite thick)
  5. Fry on a medium heat in some butter until brown on both sides. The batter is a bit more sloppy than if you were using wheat flour so be gentle when flipping

I stacked my crumpets with Greek yoghurt, strawberries and a drizzle of honey.
